Chickpeas salad

Ingredients
- Chickpeas -
- Red bell pepper -
- Canned tomatoes -
- Lettuce -
- Baby spinach -
- Mozzarella -
- Dried tomatoes -
- Onion -
- Garlic -
Cooking instructions
- Boil together chickpeas, chopped peppers, tomatoes, garlic and onions for approximately 15 minutes (I have used canned tomatoes, but if you prefer to use fresh tomatoes, then you need to peel them and add a spoon or two of tomato passata), season to taste.
- Serving: lettuce, baby spinach, mozzarella, sun-dried tomatoes, chickpeas boiled with vegetables.
