Salmon under mint-spinach cover

- Bay leaf –
- Baby spinach –

- Capers –
- Lemon juice –
- Olive oil –

- Napa cabbage –
- Natural yogurt –

Cooking instructions
- Bake salmon in aluminium foil with dill and bay leaf (180 degrees, 25 minutes).
- Spinach (I have used baby spinach, half a package), fresh mint (large handful or two), two spoons of capers, lemon juice and 1/2 spoon of olive oil. Mix all together. Put on the salmon on a plate.
- Additionally:
- Salad: cucumber, cabbage, natural yogurt, cumin.
- Beetroot with horseradish.
