Ingredients

  • Onion –
  • Red bell pepper –
  • Yellow bell pepper –
  • Garlic –
  • Zucchini –
  • Canned tomatoes –
  • Rosemary –
  • Thyme –
  • Cod fillet –
  • Lemon pepper –
  • Dill –

Cooking instructions

  • Cut and fry onion and peppers (yellow and red). Add garlic and sliced zucchini.
  • After a few minutes add the tomatoes, rosemary, and thyme (you can add also any favorite spices). Boil for a moment.
  • Transfer the vegetables to a casserole dish, arrange fish fillets on the top (I have sprinkled the fish with lemon pepper and dill).
  • Bake for 15 minutes at 200 degrees.
