Ingredients

  • Eggplant –
  • Tomato –
  • Leek –
  • Agaricus mushrooms –
  • Mozzarella –
  • Herbes de Provence –
  • Salt –

Cooking instructions

  • Cut the eggplant into slices, salt and set aside for half an hour, then rinse them and dry.
  • Then lay tomato slices on top, sprinkle with provence herbes, and add mozzarella.
  • Sauté finely chopped leek and mushrooms in a pan and place on mozzarella.
  • Cover all with the next slice of mozzarella, or grate some cheese on top.
  • Bake at 160 degrees for 20 minutes.
