Eggplant appetizer

Ingredients

- Tomato –
- Leek –
- Agaricus mushrooms –
- Mozzarella –
- Herbes de Provence –
- Salt –
Cooking instructions
- Cut the eggplant into slices, salt and set aside for half an hour, then rinse them and dry.
- Then lay tomato slices on top, sprinkle with provence herbes, and add mozzarella.
- Sauté finely chopped leek and mushrooms in a pan and place on mozzarella.
- Cover all with the next slice of mozzarella, or grate some cheese on top.
- Bake at 160 degrees for 20 minutes.
