Ingredients

  • Eggplant –
  • Zucchini –
  • Red bell pepper –
  • Canned tomatoes –
  • Onion –
  • Garlic –
  • Thyme –
  • Black pepper –
  • Optional salt –

Cooking instructions

  • Cut and salt eggplant.
  • Cut onion and stew together with garlic for 10-15 minutes.
  • Add tomatoes.
  • Add salt, black pepper, and thyme.
  • Cut zucchini and red bell pepper. Fry each separately.
  • Wash eggplant to remove salt then fry it.
  • Mix all the vegetables and cook for 15 minutes.
