Couscous with eggplant and halloumi cheese

Cooking instructions
- Flood couscous with broth.
- Fry eggplant on olive oil. After about 15 minutes add the onion, garlic, paprika, and cayenne pepper.
- After a few minutes add cumin, ginger, coriander, sweet paprika, and pepper.
- Add couscous to the vegetables and mix.
- Grill halloumi cheese.
- Sprinkle couscous with cheese and decorate with for example parsley.
