Cooking instructions

  • Flood couscous with broth.
  • Fry eggplant on olive oil. After about 15 minutes add the onion, garlic, paprika, and cayenne pepper.
  • After a few minutes add cumin, ginger, coriander, sweet paprika, and pepper.
  • Add couscous to the vegetables and mix.
  • Grill halloumi cheese.
  • Sprinkle couscous with cheese and decorate with for example parsley.
