Stuffed eggplant

Cooking instructions
- Cut the eggplant into two halves and remove the flesh.
- Cut tomatoes (or use 1/2 can of canned tomatoes).
- Cut and fry onion with bell pepper.
- Grate carrot.
- Boil rice.
- Season with oregano, basil, black pepper, and garlic.
- Mix everything and stuff the eggplant.
- Place mozzarella slices on top.
- Bake at 190 degrees for 30 minutes.
