Ingredients

  • Eggplant –
  • Tomato –
  • Onion –
  • Carrot –
  • Red bell pepper –
  • Brown rice –
  • Oregano –
  • Basil –

Cooking instructions

  • Cut the eggplant into two halves and remove the flesh.
  • Cut tomatoes (or use 1/2 can of canned tomatoes).
  • Cut and fry onion with bell pepper.
  • Grate carrot.
  • Boil rice.
  • Season with oregano, basil, black pepper, and garlic.
  • Mix everything and stuff the eggplant.
  • Place mozzarella slices on top.
  • Bake at 190 degrees for 30 minutes.
