Eggplant with pasta
Ingredients
- Lumaconi pasta –
- Eggplant –
- Onion –
- Garlic –
- Canned tomatoes –
- Oregano –
- Black pepper –
- Mozzarella –
Cooking instructions
- Boil any small pasta.
- Hollow eggplant. Wash it in boiling water.
- Fry onion with garlic, add half of the hollowed eggplant squash.
- Add tomatoes, oregano, and black pepper.
- Stew everything, add pasta and mix.
- Stuff eggplant, arrange mozzarella slices.
- Bake at 200 degrees for 30 minutes.
