Aromatic casserole with pearl barley

- Pepper in a sweet-and-sour marinade –

Cooking instructions
- Cook the pearl barley.
- Bake the whole eggplant in the oven, 170 degrees / 30 minutes.
- Baked eggplant mix together with a few capers.
- To the cooked pearl barley add eggplant, fresh parsley, chopped mushrooms, chopped sun-dried tomatoes, chopped peppers with pickles, garlic, black pepper, sweet pepper, a handful of grated cheese.
- Mix all thoroughly. Transfer to a casserole dish and add the sliced mozzarella.
