Ingredients

  • Barley groats –
  • Eggplant –
  • Capers –
  • Parsley –
  • Agaricus mushrooms –
  • Dried tomatoes –
  • Pepper in a sweet-and-sour marinade –
  • Garlic –
  • Black pepper –

  • Cheese –
  • Mozzarella –

Cooking instructions

  • Cook the pearl barley.
  • Bake the whole eggplant in the oven, 170 degrees / 30 minutes.
  • Baked eggplant mix together with a few capers.
  • To the cooked pearl barley add eggplant, fresh parsley, chopped mushrooms, chopped sun-dried tomatoes, chopped peppers with pickles, garlic, black pepper, sweet pepper, a handful of grated cheese.
  • Mix all thoroughly. Transfer to a casserole dish and add the sliced mozzarella.
  • Bake at 180 degrees for 30 minutes.
