Cod rolls with vegetables

Ingredients
- Cod fillet –
- Carrot –
- Red bell pepper –
- Green bell pepper –
- Yellow bell pepper –
- Parsley –
- Leek –
- Lemon pepper –
- Sea salt –
- Sweet pepper –
- Lemon juice –
- Tomato passata –
- Sweet chilli sauce –
Cooking instructions
- Cut into stripes carrot, 3 colors peppers, parsley and leek, then stew them in a pan.
- Season cod with lemon pepper, sea salt, sweet pepper, and lemon juice.
- Wrap stewed vegetables in the cod. Bake in the oven in a casserole dish for about 30 minutes at 170-180 degrees.
- Spice up the rest of the vegetables with herbs, add the tomato passata, sweet chili sauce, and boil for a while.
- I have served it on leaves of spinach with wholegrain cous cous.
