Ingredients

  • Cod fillet –
  • Carrot –
  • Red bell pepper –
  • Green bell pepper –
  • Yellow bell pepper –
  • Parsley –
  • Leek –
  • Lemon pepper –
  • Sea salt –
  • Sweet pepper –
  • Lemon juice –
  • Tomato passata –
  • Sweet chilli sauce –

Cooking instructions

  • Cut into stripes carrot, 3 colors peppers, parsley and leek, then stew them in a pan.
  • Season cod with lemon pepper, sea salt, sweet pepper, and lemon juice.
  • Wrap stewed vegetables in the cod. Bake in the oven in a casserole dish for about 30 minutes at 170-180 degrees.
  • Spice up the rest of the vegetables with herbs, add the tomato passata, sweet chili sauce, and boil for a while.
  • I have served it on leaves of spinach with wholegrain cous cous.
