Ingredients

  • Zucchini –

  • Tomato passata –
  • Carrot –
  • Parsley –
  • Water –
  • Salt –
  • Black pepper –
  • Basil –
  • Oregano –
  • Sweet pepper –
  • Chili pepper –

Cooking instructions

  • Boil fusilli as instructed on the package.
  • Cut zucchini and 1 red pepper, then grill.
  • Pour a little bit of olive oil to a pot, add garlic, cut onion, and stew.
  • Add tomatoes, tomato passata, 2 red peppers without peel, carrots, a piece of peeled zucchini, parsley, a little bit of water and stew.
  • When vegetables soften, blend them, if it is too thick add some water.
  • Blended mixture pour to a pot and stew for a while.
  • Add salt, black pepper, basil, oregano, sweet pepper, and chili pepper.
  • You can sprinkle with parmesan or mozzarella.
