Cooking instructions

  • Boil lentils (130 g for two portions).
  • Fry chopped onion with garlic, cumin, and cayenne pepper.
  • Add chopped tomatoes, a little bit of tomato paste, bay leaf and simmer for 20 minutes.
  • Add chopped zucchini slices.
  • Add the lentils and simmer another 10 minutes.
  • Fry (or grill) halloumi cheese slices.
  • Sauce: fresh mint and parsley, 2 spoons of capers, 4 spoons of olive oil, garlic, lemon juice -> blend all together.
