Ingredients

  • Onion –
  • Carrot –
  • Parsley –
  • Tomato –
  • Canned tomatoes –
  • Orange –
  • Tomato paste –
  • Basil –
  • Black pepper –
  • Garlic –
  • Thyme –
  • Olive oil –

Cooking instructions

  • Fry onion.
  • Peel and cut carrots and parsley into small pieces.
  • Boil the vegetables. When they are soft remove part of the water, add a few fresh tomatoes, canned tomatoes, freshly squeezed orange juice, and 2-3 teaspoons of tomatoe passata. Then blend everything into a smooth mass.
  • Add to taste basil, black pepper, garlic, thyme, and 2 spoons of olive oil.
  • Cook for approximately 30 minutes until soup thickens.
