Eggplant stuffed with green lentils

Cooking instructions
- Cut eggplant into half, hollow, sprinkle with olive oil and place in the preheated to 180 degrees oven for 20 minutes.
- Boil 80 grams of red lentils.
- Fry half a green onion.
- Add finely chopped half a red pepper, 4 mushrooms, 1/3 of the eggplant pulp, and 2-3 spoons of soy sauce to the onion on a pan.
- Remove the eggplant from the oven, stuff it and place slices of mozzarella on top.
