Lemon cheesecake with forest fruits

- Xylitol –
- Rice flour –
- Baking soda –
- Cocoa –
- Quark –
- Lemon juice –
- Stevia –
- Gelatin –
- Hot water –
Cooking instructions
- Sponge cake:
- Mix the ingredients thoroughly, pour the mass into mold and bake for 30 minutes at 180 degrees.
- Curd mass:
- Dissolve gelatin in hot water.
- Mix quark with lemon juice, stevia, and cooled down gelatin.
- Cooled down sponge cake cut into two parts.
- Place the cheese mass between sponge cake halves leaving a little bit of mass for the toping
- Smear the remaining mass on the top layer of sponge cake and place the fruits on top. The mass will keep the fruits in place.
- Leave the cake for a few hours in the fridge until it settles.
