Ingredients

  • Water –
  • Poultry meat –
  • Carrot –
  • Parsley –
  • Celery –
  • Bay leaf –
  • Lovage –
  • Allspice –
  • Black pepper –
  • Filini pasta –
  • Parsley –

Cooking instructions

  • Peel all vegetables.
  • Pour warm water to a pot, add meat, and boil.
  • Remove scum if they appear.
  • Add vegetables.
  • Reduce heat to bare minimum to keep the soup slowly boiling.
  • Add all the spices.
  • Make sure the soup is not boiling too quickly (I boil mostly in a covered pot).
  • Boil for around 3 hours.
  • Boil pasta and serve with the soup.
  • Serve with the meat if you like boiled meat. Sprinkle with fresh parsley.
