Sweet potato with tomato-pumpkin salsa

Ingredients

  • Sweet potato -
  • Tomato -
  • Pickled pumpkin -
  • Green olives -
  • Fresh pineapple -
  • Chive -
  • Greek yogurt -
  • Garlic -
  • Parsley -

Cooking instructions

  • Peel sweet potato, slice, smear with olive oil, sprinkle with favorite herbs, and bake at 180 degrees for 20-25 minutes.
  • Immerse tomato in hot water for a while (it makes the peel go away much easier), peel, and cut into cubes.
  • Add pumpkin, cut olives and pineapple, yogurt, and spices to the tomato.
  • Mix everything thoroughly.
  • Serve baked sweet potato slices with prepared salsa and chive.
