Green lentil with mushrooms and vegetables

Ingredients

  • Green lentil - 80 g
  • Red onion - 1 pieces
  • Eggplant - 1 pieces
  • Spinach - 2 - 3 handful
  • Agaricus mushrooms - 3 - 4 pieces
  • Soy sauce - 2 spoons
  • Savory - 1/2 teaspoons
  • Garlic - 1/2 teaspoons
  • Cheese - 1 handful
  • Basil - 8 leafs

Cooking instructions

  • Boil green lentil according to the instructions on the package.
  • Cut onion and mushrooms finely.
  • Cut eggplant into cubes (you can use the flash remaining from stuffed eggplant).
  • Fry the onion, add the mushrooms and stew everything.
  • Add the eggplant and spinach. Mix everything.
  • Pour water and stew everything.
  • Add soy sauce, savory, and garlic.
  • Stew for 20-25 minutes.
  • Add boiled green lentil to the stewing vegetables. Stew everything for 5 minutes.
  • Serve with grated cheese and basil leaves.
