Chanterelles the taste of autumn

Chanterelles are characteristic mushrooms, that can be found in many places in Europe. There are growing near different types of trees. They are hard and have a subtle flavor making them suitable for many dishes.

During autumn walks in forest it is good to have a look around to find them. However, if you are not sure whether the mushrooms you pick are edible for sure, it is a good idea to have them checked by professionals. Alternatively, it’s always an option to purchase them directly from a store, an option that I do exercise myself frequently. I don't know the mushrooms well, so I prefer not to take any risks.

Before cooking mushrooms should be thoroughly cleaned, rinsed and dried. If you want to eat them straight away after picking or bringing from a local store, you should simmer them for 10 to 15 minutes. It is absolutely not allowed to eat those mushrooms raw. Chanterelles can be stored in dried from for long time. Freezing is another option to keep them fresh for 2-3 months. It’s worth noting that blanching mushrooms before freezing allows to keep their taste and avoid them becoming bitter after thawing.

Chanterelles are low in calories, as they are made up mostly of water (38 kcal/ 100 g), but unfortunately due to chitin content they are hard to digest. That is why they are unsuitable for people with digestive and liver problems. Mushrooms are neither recommended for children. On the other hand, they are recommended for vegetarians, due to the fact that chanterelles contain essential amino acids. They also contain some vitamins, minerals, and quite a lot of fiber. They contain almost four times more iron than agaricus mushrooms.

Chanterelles should be incorporated into your diet, primarily because they are delicious and available only for a short period of time during the year. Thus, they add diversity to your dishes. Scrambled egg with chanterelles is a fantastic dish. Thanks to their low glycemic index, they may be consumed by every adult, including the people that care about a constant level of glucose in their blood.
