It can be found more and more frequently in supermarkets and stores with health food. The name itself, garam masala, means "hot spices". This is a spice mix originating from India and as such it’s irreplaceable in Indian cuisine. It gives amazing flavor and aroma to the dishes. It is usually added at the end of cooking to add sharpness to the dish. Its content differs depending on the origin. Part of the ingredients are roasted on a dry frying pan to extract the aroma, then all the ingredients are grinded together. Of course freshly prepared mixture is the tastiest. Keept in sealed container can be stored even for half a year. It is an excellent addition to, for instance, meats, marinades, sauces, vegetables as well as to fishes. It combines well with yogurt. I encourage you to try this spice either in a ready form or self-prepared one. Ingredients needed for its preparation are listed below.
Spices for roasting:
- 4 teaspoons of coriander
- 3 bay leaves
- Teaspoon of cumin
- Teaspoon of black pepper
- Spoon of cloves
Other spices:
- Teaspoon of ginger
- Teaspoon of cinnamon
- Teaspoon of nutmeg
- Pinch of cayenne pepper
After roasting, ingredients are combined and grinded.
